Vegetarian Alfredo Pasta
A easy creamy alfredo pasta which can be made with mushroom, chicken or bacon. My recipe is a vegetarian plain old fashion version. Remember the quantities here are approximate amounts, you can increase or decrease the quantities according to your liking.
Vegetarian Alfredo Pasta

Ingredients

  • 1/3 butter (from at the butter lady)
  • 3 crushed green chillies
  • 3 tbsp chopped fresh coriander
  • 3 crushed garlic cloves
  • Salt and pepper
  • 3 to 4 tbsp Woolworths grated hard
  • Cheese (parmesan) and extra to garnish
  • 125g or more cream cheese
  • 400 ml fresh cream
  • 1/2 cup milk (optional)
  • Cooked pasta

Method

  1. Melt butter on meduim heat. Once melted add your crushed garlic and green chillies sautéing till light brown.
  2. Add your cream cheese slowing moving it around to melt. As your cream cheese melts add your fresh cream. whisking or stirring till cream cheese has melted.
  3. Sprinkle in your parmesan cheese and 1 1/2 tbsp coriander into your sauce. Season with salt and pepper. Whisk till sauce has slightly thicken. If you feel the sauce is getting to thick this is when you add some milk which is optional.
  4. As you stir/whisk the sauce will thicken. Here you can adjust your seasoning and chilli.
  5. Toss your cooked pasta into the sauce. Garnish with remaining fresh coriander or parsley, parmesan cheese and some crushed green chilli with olive oil.
