Trotters and Sugar Beans
When it comes to trotters and beans there are always a lot of opinions, some just don’t find it appealing, some only love the beans and gravy and some loves the entire dish itself. Trotters actually has some amazing heathy benefits for healthy skin, muscle strength, and relieving joint pain. A lot of individuals use trotters to make a good healthy bone broth. I purchased my lamb trotters from Nagiahs butcher in Springfield which was all cut, cleaned and packed for me. I used my Instant pot pressure cooker to boil my beans and trotters which saved me so much of time. The spices used to make this meal was The Healthy Plate’s Kashmiri mixed masala, Kashmiri chilli powder and garam masala. Trotters and Sugar Beans

Ingredients

To boil trotters you will need:

  • 1 Stick of cinnamon
  • 1 Bayleaf
  • 1 whole cardamon
  • 1 Aniseed
  • 1 tsp red chilli ginger and garlic paste
  • Half a dozen clean trotters from Nagiahs butcher

 

  • 1 to 2 cups of sugars beans washed and soaked
  • 1 sliced onion
  • few springs of curry leaves
  • 2 slit green chillies
  • pinch of jeera seeds
  • 1 aniseed
  • pinch of mustard seeds
  • cinnamon stick and bay leaf
  • 1 tbsp red chilli ginger and garlic paste
  • 2 jam tomatoes diced
  • fresh coriander
  • 2 tbsp Kashmiri mixed masala powder (or more
  • 1 to 2 tbsp Kashmiri chilli powder (or more)
  • salt to taste
  • 1 tsp garam masala

Method

  1. Add washed and soaked beans in your Instant  Pot on pressure cooker option for 8 minutes. Once the beans has been cooked remove into a separate bowl with the water it has been boil with.
  2. Now add your cleaned and wash trotters to your Instant Pot pressure cooker for 10 minutes.
  3. In a pot add your oil on medium heat with your jeera seeds, mustard seeds, onions, curry leaves, bay leaf, green chillies, aniseed and cinnamon stick. Cook till onions are soft.
  4. Add your red chilli ginger and garlic paste along with your chopped tomatoes. After a few minutes add your Kashmiri mixed masala and chilli powder leaving it to cooked until tomatoes are soft (i normally add some chopped coriander when the tomatoes are soft). Pour about a quarter cup of boiling water from the side of the pot to prevent the chutney from burning.
  5. Take your drained boiled trotters and mix it into your tomato mixture mixing for a few minute coating well, now pour your sugar beans with the boiled water your beans was boiled with adding it to your trotters. Making sure to mix until everything is well combined.
  6. Here you can adjust your spices if your prefer it to be more spicy and season with your salt. Leaving trotters to cooking for 10 minutes on low to medium heat (sprinkle some garam masala during 10 minutes). Once the gravy is not to thin but a nice smooth thick gravy garnish with freshly chopped coriander and enjoy with some soft homemade roti.
