Tamarind Soy Chilli Grilled Fish
A marinade perfect for any type of grilled or baked fish. You could also make a soft steam fish and pour this marinade over once your fish has steamed, but you will have to take your blended marinade and give it a quick boil or simmer on the stove on low for five minutes before adding it to your steamed fish. Here I made a baked/grilled salmon fish. I slit the fish to stuff sliced fresh peppers and onions. This recipe is a restaurant-quality dish you can easily cook at home in just 30 minutes. Serve this light yet flavorful dish with rice for a healthy and delicious meal. Remember the quantity for sauce ingredients you can easily adjust to your taste once blended. You can increase or decrease the amount of marinade depending on the size of your fish. It's all about playing around with the ingredients.
Tamarind Soy Chilli Grilled Fish

Ingredients

  • 1 meduim size fresh fish
  • 3 tbsp tamerind soaked in 1 cup of boiled water
  • 1 tbsp asian sweet chilli sauce
  • 4 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 3 tbsp fish sauce
  • 2 freshly crushed cloves
  • 1 tbsp finely sliced ginger
  • 2 green chillies
  • 1 cup of fresh coriander
  • 1 to 2 tbsp sambal oelek
  • Salt and pepper
  • Sesame oil
  • Olive oil

Method

  1. Wash your fish and pat dry.
  2. Drizzle some olive oil onto a baking tray (I used the Le creuset 3 Ply Stainless Steel Roaster) and lay your fish flat.
  3. Preheat oven on 180 degrees C.
  4. Blend of the above ingredients except the salt and pepper.
  5. Marinate your fish with the blended ingredients. Leaving the extra for basting while it cooks. If you don’t have enough to baste make a little extra with the same ingredients as blended.
  6. Season your fish with pepper. Drizzle some sesame seed oil onto the fish.
  7. Remember Asian sauces like Soy sauce is slightly salty so season your fish lightly with salt.
  8. Bake your fish covered for 10 minutes and uncovered for another 10 till fish is done (until flesh is flakey, you can check by using a fork). Remember to baste your fish as it cooks.
  9. Grill for 5 to 10 minutes (optional).
