Sugar Free Saffron Coconut Lassi
A refreshing sugar free drink perfect for diwali or just to have on a hot summers days. A lassi filled with cardamom, saffron, coconut and nuts so refreshing and healthy.
Sugar Free Saffron Coconut Lassi

Ingredients

  • 2 cups fresh yogurt
  • 2 tbsp xylitol sugar
  • 1/2 cup cold milk
  • 1 tbsp hot Milk
  • 1/4 tsp cardamom powder
  • 8 saffron strands
  • Almonds and pistachios for garnish
  • 1 tbsp desiccated coconut
  • 1 tbsp nibbed almonds
  • 1 tbsp chopped pistachios
  • Ice Cubes

Method

  1. Soak the saffron in a tablespoon of hot milk for some time and crush it well.
  2. Take yogurt, saffron milk, sugar, cardamom powder and milk in a blender. Blend it until smooth and frothy
  3. Add the chopped nuts, desiccated coconut and blend together .
  4. If you want a slightly thin consistency, add little more milk to the lassi while blending.
  5. Pour the lassi into glasses and add the crushed ice cubes to it.
  6. Garnish with nuts and saffron. You can also chill the lassi in the refrigerator.
  7. Serve chilled.
