Sugar Beans Curry
Sugar beans curry for me is always the perfect meat free dish. For the best sugar beans always pressure cook your beans first, I used my kenwood pressure cooker. It always give you the right consistency for your gravy. Definitely some soft melting potatoes and the right spices. Remember you can adjust the spices accordingly as the below are estimated quantities.
Sugar Beans Curry

Ingredients

  • 2 cups sugar beans washed and soaked overnight
  • 3 tablespoons oil or ghee
  • Pinch of jeera seeds
  • Pinch of ajwain seeds
    Pinch of mustard seeds
  • 1 cinnamon stick
  • 2 cloves
  • 1 cinnamon stick
  • Bay leaf
  • Spring of curry leaves
  • 2 fresh chillies
  • 1 tsp red chilli ginger and garlic paste
  • 1 onion peeled and sliced
  • 2 meduim tomatoes chopped
  • 4 potatoes peeled and cut into curry pieces
  • 1 tbsp Kashmiri mixed masala
  • 1 tbsp Kashmir chilli powder
  • 1 tsp Garam masala
  • 1 tsp jeera powder (optional)
  • 1 tsp dhania powder (optional)
  • 1/2 tsp Turmeric
  • Pinch of Hing
  • Salt to taste
  • Freshly chopped coriander

Method

  1. Pressure cook your soaked and washed beans for 8 minutes. I used my Kenwood pressure cooker which makes the gravy the right consistency.
  2. In a pot heat oil on meduim heat. Add your jeera seeds. mustard seeds, ajwain, bay leaves, dry chillies, cloves and cinnamon sticks. Let it sauté for a few seconds.
  3. Now add the onions, green chilies, curry leaves and ginger and garlic. Leaving it to cook till onions are soft.
  4. Once onions are soft add your masala powders. Sautéing for a few seconds. Pour a little water to prevent burning. Now add potatoes and coat well with masala. Pouring about 1/4 to 1/2 cup boiled water just to let potatoes cook a little.
  5. Now add your chopped tomatoes and some chopped coriander mixing well.
  6. Once your potatoes are half way cooked add your pressure cooked beans and the water from the boiled beans to make a gravy. The water from the boiled beans makes the best gravy.
  7. Add your salt to taste and a pinch of hing. Cover and cook on low till potatoes are soft and gravy is right consistency.
  8. Garnish with freshly chopped coriander and enjoy.
