Spicy Peri-Peri Spatchcock Chicken
Ingredients
1 whole chicken
1 tbsp red chilli ginger and garlic paste
Salt and pepper
1 tsp apple cider vinegar
3-4 tbsp Nandos peri-peri sauce
2 tbsp peri-peri spice
1 tbsp hot chilli powder
1 tsp paprika
1 tbsp peri peri marinate
3-4 tablespoon olive oil
1 tbsp organic tomato sauce
1 tsp mixed dry herbs
1 tbsp fat free mayonnaise or plain yogurt
Peri-peri sauce
2-3 tbsp Nandos peri-peri sauce
1 tbsp peri-peri marinate
1 tbsp peri-peri spice
1 tbsp organic tomato sauce
½ tsp mixed herbs
1 tbsp fat free mayonnaise
1 tbsp creme fraiche
2 tbsp olive oil
1 tbsp sweet chilli sauce
Method
Mix all ingredients together and marinate with chicken.
Leave overnight to marinate.
Bake marinated chicken on 180 degrees C, covered with foil for 45 minutes.
Mix sauce ingredients and give it a quick boil.
Pour sauce over the chicken and switch to grill in the oven until golden brown.
Keep basting with leftover sauce.
