A simple spicy egg chutney with soft runny yolks is a dish anyone will enjoy. A recipe featuring on the food24.com
3 to 4 tbsp oil
3 large jam tomatoes liquidized with 1 green chilli
1 small onion finely chopped
2 slit green chillies
4 curry leaves
Freshly chopped coriander to garnish
Pinch of mustard seeds
1/4 tsp red chilli ginger and garlic paste
1/4 to 1/2 tsp turmeric
1 to 2 tsp chilli powder
1/4 tsp jeera or cumin powder
Salt and pepper to taste
Pinch of chilli flakes
Pinch of sugar
In a non-stick pan add your oil on medium heat with your mustard seeds, onions, curry leaves and fresh green chillies. Leaving it to fry until onions are soft.
Now add your blended tomatoes, red chilli ginger and garlic paste, turmeric, jeera powder, chilli powder, pinch of sugar and salt. leaving it to cook for a few minutes till oil rises a little on low.
Crack your eggs into the chutney, grind some fresh pepper, sprinkle fresh coriander and chilli flakes and leave to cook on low with a lid to cover until your eggs are cooked and yolks are cooked according to your liking.
