2 tbsp Lamb spice rub (The healthy plates lamb rub)
1 tsp apple cider vinegar
2 tbsp olive oil
Coating ingredients:
3 cups of bread crumbs (For my breadcrumbs I used some of my bread loaf which I tore into chunks and layered into baking tray. Toasted the bread till dried out and edges are golden. Removed from oven leaving it to cool completely. Once cooled i added it to a food processor and blended till slightly fine depending on your liking. I also added some dried mixed herbs. all done)
2 tbsp Kashmiri chilli powder
2 tbsp sesame seeds
1 cup panko bread crumbs
1 tsp ground pepper
3 cups of flour
2 eggs beaten
Method
Take the washed lamb and marinate it with all the marinate ingredients except the olive oil.
In a flat pot add the olive oil on medium heat and layer the marinated chops into the pot leaving it to cook till tender.
Remove chops onto a plate and allow to cool.
Whisk your eggs into a bowl separately.
Add the flour to a bowl separately.
Add the bread crumbs, chilli powder, sesame seeds and panko crumbs together in one bowl.
Dip each lamb chops into the egg, flour, bread crumbs, back into flour and again bread crumbs.
Once crumbed leave coated chops in fridge for a while until my oven was preheated and grill till golden brown. You can easily pan fry or air fry.
