Spicy Bean And Chicken Soup
A cosy spicy bean and chicken soup made in one pot. It’s packed with protein, veggies, and hearty beans. Healthy chicken white bean soup takes very little time and effort to make. You are likely to have most (or all) the ingredients, in your freezer, pantry, and spice drawer.
Spicy Bean And Chicken Soup

Ingredients

  • 3 chicken breast diced
  • 1 medium onion sliced
  • 4 sliced green chilies
  • 2 tbsp green masala
  • 1 tbsp red ginger and garlic paste
  • 1 tsp tumeric
  • 2 tbsp freshly ground jeera powder
  • 1 tbsp freshly ground dhania powder
  • A squeeze of lemon juice
  • 5 dried chillies crushed
  • 5 curry leaves
  • 3 whole cloves
  • Chopped coriander
  • Salt to taste
  • 1 tomato finely diced
  • 2 cups full of baby spinach
  • 1 cup of chopped leeks
  • 1 sliced carrot
  • 1 can of cannellini beans
  • Olive oil
  • Bay leaf

Method

  1. Take the washed cut chicken breast and add 1/4 tsp turmeric, black pepper and 1 tbsp green masala, mixing well.
  2. To a medium heated pot with some olive oil, add the onions, tomato, ginger garlic paste, green chillies, cloves, bay leaf, curry leaves and chicken. Let it cook for about 3 minutes.
  3. Add the jeera powder, dhania powder, more black pepper and balance of turmeric, mixing well.
  4. Add the carrots and leeks along with four cups of boiled water.
  5. Add the crushed dried red chillies, fresh coriander and salt to taste and leave to cook, covered for 5 minutes.
  6. Add the washed canned beans and spinach, a squeeze of lemon and the balance of green masala.
  7. You can adjust if you need for salt or more chili or black pepper to it. Leave it to cook for another 5 minutes.
  8. Enjoy with a slice of a soft bread loaf smeared with butter.
