Simple Sugar Free Soji
Soji is everyone’s favorite Indian sweet dish. I normally make mine the super deluxe way with condensed milk to fresh cream and loads of butter and white sugar in a larger quantity. But I wanted Soji more balanced out, less with all the high sugars but still delicious. I have a normal basic simple Soji recipe with no eggs as well but I came across @the_daily_dilemna Soji recipe and felt it will be good to try out another food bloggers recipe but I changed it a little with some ingredients. thank you for this inspiration.
Simple Sugar Free Soji

Ingredients

  • 1 cup semolina
  • 200g to 250g butter
  • Cinnamon stick
  • 1 cup fat free or low fat milk 1 cup of water
  • 1 egg whisked
  • 1 cup of xylitol
  • Pinch of saffron
  • Optional yellow food coloring (I did not add)
  • Freshly ground cardamom
  • 2 tablespoons desiccated coconut
  • Chopped almonds and pistachio

Method

  1. In a pot on low heat add your soft diced butter to melt along with the semolina and cinnamon stick allowing it braise on low heat and stirring continuously.
  2. In a separate bowl add the whisked egg, fat free milk, water, xylitol , saffron, cardamom and optional yellow food coloring.
  3. Once the soji has braised add the milk mixture into the pot with the coconut and some chopped nuts.
  4. On low heat, let it cook stirring it continuously to prevent from burning at the bottom for about 10 minutes.
  5. Remove from stove you can top with some nestle dessert cream which is optional and keep some aside without the cream if you want it to be more on the healthy side.
  6. Sprinkle some chopped almonds, pistachio ,cardamom and enjoy.
