Soji balls or Rava laddu (ladoo) are the perfect treat for any occasion! It is a no-fail and beginner-friendly recipe.
Ingredients
1 tsp cardamom powder or more
Pinch of nutmeg
3 tbsp nibbed almonds
75g butter
500g Semolina
1 tin Condensed milk
4 tbsp Desiccated coconut
Desiccated coconut to roll the balls into (I added a drop of food coloring and baking white glitter dust to it)
1 tbsp sesame seeds (optional)
Method
Toast almonds and sesame seeds in a pan on low heat till slightly golden. Remove and set aside.
In a pot on medium heat add your butter to melt, pour the semolina and roast on a gentle heat. Mixing continuously, the semolina is ready when it has a slightly crispy texture and slight change in color. Remove from the heat.
Add the cardamom powder, nutmeg to the roasted semolina and mix well. Add almonds, sesame seeds and condensed milk mixing well. Also add 4 tablespoons of the desiccated coconut to the semolina mixture. Leave the mixture to cool for a few minutes.
Take a tablespoon of the semolina mixture at a time and roll into a ball using the palm of your hands. Using the rest of the desiccated coconut roll the Soji ball, covering it completely. Enjoy
Optional: You could add chopped cashews or pistachios and raisin to the mixture.
