Roasted strawberries with whipped ricotta cheese. It been one of those times of buying a big punnet of strawberries which tasted not as sweet as it suppose to be. Strawberries is a fruit that can be used in so many ways and sweetened up.
Ingredients
Strawberries washed and sliced in half
Coconut sugar or honey according to your tastes
Chopped pecans
Slivered almonds
Chopped pistachio
Tub of ricotta cheese
Pinch of salt
Method
Add the strawberries in a baking tray mixed with the honey or coconut sugar and nuts. Pop into a preheated oven to grill on 150 degrees C.
Roast strawberries for 20 to 25 minutes or until slightly caramelized, but still firm enough to keep their shape. Remove from oven and allow strawberries to cool. Set aside until ready to use.
Place ricotta, honey and salt in a mixing bowl and whip together with a wooden spoon until mixture is light and fluffy (you can use a stand mixer or hand mixer if you prefer).
Spread ricotta mixture in a large, shallow dish and top with strawberries. Drizzle with a small amount of honey and finish with a sprinkle of pistachios.
Serve with wafers or crackers, toasted bread or have it plain on its own.
