Roasted Potatoes Cooked In A Butter Vegetable Stock
Perfect side for any baked dish or roast. roasted potatoes cooked in a butter vegetable stock, quick and easy to make.
4 medium potatoes
1 large orange sweet potato
Salt and pepper for seasoning
1 medium onion (cut in wedges)
4 tbsp butter
1 tsp fresh herbs
1 cup vegetable broth
2 cloves garlic (crushed)
Preheat oven on 180 degrees C.
Wash all the potatoes well and add it to a pot to parboil for 10 minutes. Drain the potatoes and slice into round disk shapes layering them in an oven proof dish along with the onions.
In a bowl add the butter salt, pepper and fresh herb and heat in microwave until melted.
Add the butter to the potatoes making sure they are all fully coated.
Pop into the oven on grill for 15 minutes.
In another bowl add the vegetable stock and crushed garlic mixing well.
Remove the casserole or dish of potatoes from oven to pour the stock all over onto the potatoes and put back into the oven for another 15 minutes to grill until slightly crisp but till having enough of the sauce.
While potatoes are grilling open every 5 minutes to mix and coat with sauce.
Once done season with some pepper and chopped coriander.
