Sugar Free Vegan Soji Porridge
Rava / Soji porridge is a simple, easy to make and filling breakfast. You could add xylitol or honey to make this sugar free. This is ideal for those who are in a rush in the morning and often skip breakfast. It takes just a few minutes to put it together. Vegans can skip the milk and cook the semolina in water and add some coconut milk for flavour just before taking the pan off the heat.
Sugar Free Vegan Soji Porridge

Ingredients

  • 1 tbsp ghee or butter
  • 1/2 cup semolina
  • Cardamom powder according to your liking
  • Sugar according to your taste (i used xylitol)
  • Pinch of cinnamon
  • 1 tsp desiccated coconut optional
  • 1 cup of boiled water
  • 1/2 to a cup of hot milk
  • Crushed pistachio and almonds

Method

  1. Heat ghee in a pan. Add the semolina and coconut and roast it for a minute on a low heat.
  2. Add the freshly boiling water and milk and stir continuously to avoid lumps from forming. Add the sugar to taste, cinnamon, cardamom and mix.
  3. Cover the pan and let the porridge cook on a very low heat for about a minute till it thickens. Take care to see that it does not get scorched.
  4. When it reaches the desired level of thickness and the grains look transparent, take the pan off the heat. You can adjust the thickness of the porridge by adding more milk or water.
  5. Top with the crushed pistachio, almonds, a sprinkle of cardamom powder and serve immediately.
