Pecan And Almond Jam Squares

Ingredients

  • 1/2 cup of soft butter
  • 1/2 cup sugar
  • 1 tsp vanilla essence
  • 2 eggs separated
  • 1 1/2 cups flour
  • 1 pinch baking soda
  • 1/2 tsp baking powder
  • Jam to spread
  • 1 cup ground nuts (I use pecans and almonds)
  • 2 tbsp sugar

Method

  1. Cream butter/margarine and sugar.
  2. Add vanilla essence and egg yolks, cream together, well.
  3. Add sifted flour with baking soda and baking powder, mix well.
  4. Pat dough out onto a baking tray.
  5. Spread with jam and 1/2 cup ground nuts.
  6. Then over that spread the WELL BEATEN egg whites.
  7. Sprinkle the other half of ground nuts to which 2 tablespoons of sugar have been added.
  8. Bake for 30 minutes at 165 to 170 degrees C.
  9. When cool, cut into squares.

  • Jam
  • Nuts
  • Egg whites
  • Nuts with sugar
