Paneer Quesadilla
One of my favorite cheese is paneer and can be made into a curry, grill, patties to wraps, the list can go on. Being pregnant right now I have been choosing easy affordable ways to cook up delicious satisfying meals for everyone at home. I had a block of paneer and wraps from Woolworths lying in my freezer and since it was a meat free day I decided to make some paneer quesadillas with whatever ingredients I had in my kitchen with a side salad and freshly fried masala chips.
Paneer Quesadilla

Ingredients

Paneer

  • 1 block of Woolworths paneer cut into cubes
  • 2 tbsp olive oil or butter
  • 1 medium sliced onion
  • 6 sliced mushrooms
  • sliced or cubed peppers
  • 1 tsp red chilli ginger and garlic paste
  • 2 sliced green chilli
  • 1/4 cup sweet corn
  • 1 tsp Chilli powder or more
  • 1/4 tsp turmeric
  • pinch of jeera seeds
  • 1/2 tsp jeera powder
  • Chilli flakes
  • Salt and pepper
  • Chopped fresh coriander and green onions
  • 1 tsp green chutney or coriander chutney
  • 1 tsp pure peri peri sauce
  • 1 tsp chilli sauce

Sauce

  • 1 tbsp butter
  • 2 tbsp mayonnaise
  • 1 cup fresh cream 
  • ½ cup grated mature cheddar
  • Peri peri sauce according to your liking

Extras

  • Wraps
  • Chopped lettuce
  • Plain coleslaw 
  • Cream cheese
  • Crème fraiche or Sour Cream
  • Chopped coriander
  • Butter to fry
  • Cheese to sprinkle 

Method

Method For Paneer

  1. Add your oil to your pan on medium heat with your onions, jeera seeds and green chillies. Leaving it to cook for a few minutes.
  2. Add your cubed paneer and red ginger and garlic paste, mixing till well coated (let it fry for 3 minutes).
  3. Add your mushrooms, peppers, sweetcorn and spices, making sure the spices are all coated onto the paneer and vegetables.
  4. On low heat add your green chutney and peri peri sauce along with your freshly chopped coriander and green onions. you can adjust your spices, sauces etc. according to your tastes.
  5. Remove paneer into a bowl. You will use the same pan with juices for your sauce.

Method For Sauce

  1. On low heat in the same pan add your butter letting it melt, add mayonnaise, fresh cream and grated mature cheddar. Whisking continuously until the cheese melts and mixture becomes slightly thick.
  2. Add peri peri sauce mixing well. You can adjust if you need more cheese or mayonnaise for taste or fresh cream to make the sauce a little thin.
  3. Once the sauce is ready add your paneer mixture to the sauce folding the sauce gently until well combined on low heat for two minutes. Now you can also adjust how hot you would like your mixture to be.
  4. Take one wrap smear some cream cheese all over, add chopped lettuce and plain coleslaw, add your paneer mixture over lettuce, add dollops of crème fraiche or sour cream or cream cheese and a very light sprinkle of cheese. Chop some coriander, green onions and a sprinkle of chilli flakes over. Top with another wrap.
  5. Melt a little butter onto a pan on low heat placing your quesadilla on the pan to toast. You might find it difficult to flip the quesadilla onto the other side to toast. The safest, cleanest and easiest way to flip your quesadilla is by placing a large plate on top of it in the pan, grabbing your pan by the handle, and flipping it over onto the plate.
  6. You can then place it back into your pan for another few minutes to get the other side nice and browned and that cheese melted. Cut into sliced and enjoy with either a salad or fried chips.
