Oven Roasted Rajah Spiced Vegetables

Oven Roasted Rajah Spiced Vegetables

Ingredients

  • 1/4cup olive oil
  • Salt and pepper
  • 2 tbsp @rajahsouthafrica curry powder with garlic
  • 1 tsp mixed dried herbs
  • 2 cups of broccoli
  • 2 cups of cauliflower
  • 1 cup of sliced baby marrows
  • 1 cup of chucks of red onions
  • 2 cups of cubed butternut
  • 1 cup of chopped red bell pepper
  • 1 tsp mixed dried herbs
  • 2 tbsp of nuts and seed sprinkles
  • 2 tbsp creme fraiche
  • 1 tbsp freshly chopped coriander
  • 1 tbsp balsamic vinegar

Method

  1. Preheat oven at 180 degrees C
  2. In a bowl mix olive oil, @rajahsouthafrica curry powder, salt, pepper, dried herbs and set aside.
  3. In a lined baking tray add your washed vegetables and pour over your olive oil marinade onto the vegetables, making sure the vegetables are well coated.
  4. Add into a preheated oven and bake for 15 to 20 minutes or until vegetables are cooked through. Making sure to stir halfway through cooking.
  5. Once done drizzle some balsamic vinegar, add a dollop of creme fraiche, chopped coriander and sprinkle of nuts and seed mix.

TIPS FOR PERFECTLY ROASTED VEGETABLES

  • DO NOT overlap the veggies; arrange them in one single layer.
  • Stir the veggies halfway through cooking.
  • Use your favorite seasonings and @rajahsouthafrica spices, and adjust the amounts to your preference.
  • Continue roasting until the vegetables are easily pierced with a fork or knife and they are showing crispy, charred bits at the edges.
