Oat Honey Bread Loaf
We all crave a slice of bread once in a while. I made a quick and easy gluten free, sugar free (can also be dairy free by replacing the milk with almond milk) oat honey bread loaf, no refined flour at all! Oats are higher in protein and healthy fats and lower in carbs than most other grains. This bread is absolutely delicious perfect to be heated with some soft butter or to have with a delicious homemade soup.
Oat Honey Bread Loaf

Ingredients

  • 3 cups gluten free oat flour (can take the normal gluten free oats and add to a food processor to grind into flour)
  • 1/2 cup honey
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 3/4 cup milk / almond milk
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 eggs

Method

  1. Preheat oven to 176 degrees C.
  2. Using a food processor grind 3 cups of old-fashioned rolled oats into fine oat flour. Or you can buy the fine oat flour.
  3. In a large bowl whisk together honey, eggs, unsweetened vanilla almond milk/ normal milk, vanilla extract (if you using vanilla almond milk don’t add vanilla extract) and salt.
  4. Add baking soda and baking powder to oat flour in the processor. Process or hand mix for 10 seconds.
  5. Next, add the flour mixture to wet ingredients and mix until totally combined. The batter will be runny, but should have some resistance. 
  6. Let the mixture sit for five minutes.
  7. Line a small bread loaf tin.
  8. Add mixture to your parchment paper lined bread pan, top with any topping (sesame seeds or whole oats) and place on the top rack of the oven.
  9. Bake for 35 minutes until inserted toothpick comes out clean.
  10. Let cool COMPLETELY for about two hours. The bread is made just from oat flour so it is a bit crumbly, if you let it cool completely it will be far less crumbly and just perfect.
