Melt In The Mouth Naan Khatai
Naan Khatai is an authentic Indian sweet and savory eggless cookie that can be easily prepared at home. Yes most Indian stores stock these delicious Indian biscuits but I feel it never taste as good as one baked freshly at home with the best ingredients. These Naan Khatai, I promise you will melt into your mouth and are just heaven. I don’t add a lot of nutmeg or cardamom because of the boys at home. So you can add according to your liking.
Melt In The Mouth Naan Khatai

Ingredients

  • 1 cup of ghee at room temperature
  • 1 1/2 cups to 2 cups of white flour
  • 1/2 cup gram/chana flour
  • 10 to 12 tablespoons of castor sugar according to your sweetness
  • 1 tsp bicarbonate soda
  • 2 to 3 tsp freshly ground cardamom/elachi
  • Nutmeg optional
  • 3 tsp semolina

Method

  1. Preheat oven to 180 degrees C.
  2. Cream the soft butter ghee and sugar together.
  3. Add the bicarbonate soda, gram flour, semolina, cardamom and nutmeg which is optional. Mix well until combined.
  4. Now add your flour slowly until you get a soft dough (maximum 2 cups of flour). If you feel the dough is still dry add a little soft ghee. As you mix with your hand you will get a soft dough.
  5. Now take small pieces one at a time and make into small balls onto a non stick biscuit baking tray. Take your almonds and press down on top of each biscuit.
  6. Bake for 20 minutes until very light brown. As it bakes it will flatten slightly. Remove from oven and allow to cool for 15 minutes. Enjoy with a cup of chai.
