Malva Pudding is a decadent South African dessert. It is moist, sticky, sweet, milky, buttery and the perfect treat for when you want to indulge. This recipe can easily be doubled.

2 eggs
3/4 cup sugar
1 1/2 tbsp melted butter
1/4 teaspoon salt
1 teaspoon vinegar
1/3 cup milk
1 1/8 cup of flour
1 tbsp apricot jam
1 tsp baking powder
Sauce ingredients
3/4 cup fresh cream
100g butter
1/4 cup brown sugar
1 tbsp vanilla essence
1/3 cup water
Method
Preheat the oven to 175 degrees C.
In a bowl, beat the eggs and the sugar (with an electric mixer) until it is foamy.
Add the flour, salt, baking powder, vinegar, butter, jam, milk and mix well until thoroughly combined.
Grease a small baking pan (I used 4 of my Calm collection 10cm Mini Cocotte from @lecreusetsa).
Add the batter to the greased pan and bake it for about 30 minutes, or until the toothpick or knife comes out clean.
While the cake is baking, you can prepare the sauce.
Add the fresh cream, butter, brown sugar, vanilla essence and water to a pot on low heat until the butter is melted and it is nice and warm.
When the cake comes out of the oven, you simply pour the sauce over the hot cake little by little.
Distribute it evenly since the edges usually get more of the liquid than the middle. You can also poke some holes at the top of cake and pour the sauce over. Leave the cake aside for 45 minutes to soak up the sauce.
Heat and enjoy with some cold custard or vanilla ice cream.
