Low Carb Berry Lassi Pistachio Mousse

Low Carb Berry Lassi Pistachio Mousse

Ingredients

  • 1 1/2 cups fresh cream
  • 2 1/2 cups of mixed strawberries and raspberries
  • 3 tbsp xylitol (depending on your taste)
  • 1/2 tsp fresh ground cardamom powder or more
  • 1 tbsp roughly ground pistachios or more

Method

  1. Add washed raspberries and strawberries with 2 tbsp xylitol to a blender and blend till puréed.
  2. Beat the fresh cream until stiff peaks form adding 1 tbsp of xylitol to it.
  3. From the berry purée, add 1 1/2 to 2 tbsp each in 4 small dessert bowls or dessert glasses.
  4. The rest of the purée fold into the whipped cream along with the cardamom powder and pistachio. You can adjust the sweetness, cardamom and pistachio amounts now according to your taste.
  5. Take the fresh cream mousse mixture and pipe into each dessert bowl or dessert glass layered on top of the berry purée.
  6. Garnish with raspberries, sliced strawberries, pinch of cardamom and crushed pistachios.
  7. Refrigerate for an hour or more and enjoy.
