A delicious soft moist guilt free low carb and sugar free pancake that can also be made dairy free by replacing the cream with almond milk and just not adding butter over.
Ingredients
1 cup almond flour
2 whole eggs
1/2 cup unsweetened almond milk (for dairy free) or heavy cream
1 tsp pure vanilla essence
1/2 tsp baking powder
2 tbsp butter or avocado oil for greasing skillet
Xylitol to taste (optional)
Method
In a medium bowl whisk together almond flour, eggs, almond milk or fresh cream, vanilla extract, baking powder together.
Spoon 1/4 cup of pancake mix onto a hot oiled skillet and cook until done, flipping occasionally.
Serve with honey, berries and some cinnamon powder.
