Wash and boil your fresh beetroot till soft not to soft. Once soft, peel, rinse, pat dry and cut into chunks.
In a separate pot parboil your sweet potatoes, carrots and potatoes.
Once your vegetables have been parboiled, in a non stick oven pan add your vegetables including your beetroot to it. Add 2 peeled garlic pods.
In a bowl add honey (it all depends on how much of vegetables you using, so you can estimate how much honey to use, I used two tablespoons) heat in microwave for 30 seconds.
Add olive oil (I used about 3 tablespoons) to your melted honey mix well and pour into the vegetables, season with salt, pepper and herbs making sure you have marinated your vegetables throughly. Last add your pecans and seeds.
Bake in preheated oven 180 degrees C covered with a foil until vegetables are cooked through.
Last five minutes switch the oven onto grill removing the foil just to slightly crisp part of the vegetables.
Remove from oven once done give it a toss. Crumble some feta cheese over and a quick drizzle of honey.
