My all time favorite puri recipe. The key ingredient for these soft fluffy puri is the buttermilk and to leave the dough to rest covered while you can attend to your other dishes. So simple and definitely a recipe you will be using often.
Ingredients
2 cups flour
2 tsp baking powder
2 tbsp room temperature butter ghee
1/2 teaspoon salt
1 - 1½ cups buttermilk
Method
Sieve flour, baking powder and salt in a bowl.
Add your ghee rubbing together with finger tips.
Add the 1 cup of buttermilk and mix into a soft dough. (mixture can be a little dry so add an extra 1/2 cup more of buttermilk nothing more).
Knead for 5 minutes.
Add the dough into clean bowl cover with cling wrap and leave to stand for 30 min to a hour.
Sprinkle flour on your working surface and roll out flat and cut desired shapes.
