Easy Saffron Chicken Balti
This has got to be one of the easiest curries ever to make. Perfect to prepare the night before and just cook up the next day in your balti dish. If you don’t have a balti dish you can use a normal pot. This recipe can also be used with some lamb pieces. Spice quantities are approximate amounts, you can add according to your taste.

Ingredients

Ingredients For Marinate

  • 1 chicken skinned and cut into curry pieces
  • 1 cup of double thick yogurt
    red chilli ginger and garlic paste
  • 1 sprig of curry leaves
  • 2 tbsp freshly chopped mint
  • 2 tbsp freshly chopped coriander
  • 1 tbsp rombo rossi masala
  • 1 tbsp Kashmiri chilli powder
  • 2 tbsp Kashmiri mixed masala
  • 1 tsp jeera powder
  • 1 tsp crushed pepper
  • 2 green chillies

Gravy ingredients

  • 3 tbsp ghee
  • 1 onion sliced
  • Pinch of jeera
  • 3 dry chillies
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 tbsp Store bought fried onions
  • 1 tsp garam masala
  • 1 grated tomato
  • 3 soft cooking potatoes cubes and fried separately
  • Pinch of saffron added to 2 tbsp warm water
  • Salt to taste
  • 1/2 cup boiled water

Method

  1. Marinate your chicken with the above marinade ingredients and set aside.
  2. In your balti dish heat your ghee on meduim heat. Add your jeera seeds, 2 dry chillies, cinnamon stick, bay leaf and slice onions let it fry till onions are soft and light brown.
  3. Now add your marinated chicken to your balti dish and mix carefully into the onions. Allow to cook for five minutes stirring occasionally.
  4. Add your tomato and fried potatoes coating it well into the chicken. From the side of the pot add your half cup of boiled water to form a thick gravy (If you prefer more a gravy add a 1 cup of water). Pour your saffron water in your curry and leave to cook on low until chicken is cooked through and gravy is not to thin or thick.
  5. When almost done add your 1 dry chilli crushing is over, store bought onions, freshly chopped coriander and sprinkle of garam masala leave it to cook for a few minutes.
  6. Enjoy with some soft roti, naan or braised rice.
