Cadbury Coconut Cluster
One of my favorite childhood treats was a coconut cluster. I always loved coconut chocolates. These few days I have been thinking a lot of my favorite childhood treats. So I have been researching on how to make something similar to satisfy my cravings. This recipe is absolutely delicious to eat once in a while in a balance.
Cadbury Coconut Cluster

Ingredients

  • 200 grams butter melted
  • 100 grams/ 7 level tbsp castor sugar
  • 2 tbsp golden syrup
  • 85 grams / just under 1 cup of desiccated coconut
  • 3 tbsp cocoa powder
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 2 whole Weetbix cereal crushed
  • 135 grams/14 level tbsp flour

For the topping

  • 2 slabs of @cadbury_sa dairy milk chocolate
  • 3 tsp melted butter

Method

  1. Add all the ingredients to the bowl except for the topping. Mix all till well combined.
  2. Line the baking tray and spoon out mixture into tray making sure to spread till covering the whole tray.
  3. Bake on 180 degree C for 25 minutes.
  4. Remove from oven allow to fully cool while in the tray.
  5. In a bowl break the chocolate and put in the microwave for a minute until melted adding the melted butter to it.
  6. Spoon over the top of the cooked coconut mixture (still in the tray).
  7. Place in the fridge to set for a hour. Once set remove from the tray and place on a board and cut with a sharp knife into squares. At first you will find it hard to cut, as a few minutes pass by in room temperature it will be just perfect.
  8. Store in a air tight container at room temperature.
