Black Bean Asian Seeded Exotic Mushroom Fry
Ingredients
1 tray of exotic mushrooms torn into pieces
2 tbsp olive oil
2 tbsp sesame seeds
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
3 slices green Chilli
1 tbsp finely chopped fresh ginger
2 garlic cloves finely chopped
2 carrots julienne
1 tbsp chopped fresh coriander
1 tsp chopped mint
3 tbsp black bean sauce
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp honey
Method
Heat a large pan with oil.
Add all your seeds. Tossing for a minute on medium heat.
Add your chillies, ginger and garlic until slightly golden.
Add the carrots and mushrooms frying on medium heat for five minutes.
Add in your sauces, frying and coating your mushrooms and carrots for two minutes.
Add your greens tossing for one minute and done.
Serve hot as a side.
You can add some spinach to this or sliced baby marrows.
