Banana Loaf
Banana cake, banana loaf, banana bread? One of the famous treats most households have been making recently is banana loafs, to be honest all recipes are very similar and always comes out delicious. I enjoy my slice with some butter and sugar free peanut butter.
Banana Loaf

Ingredients

  • 3 very ripe bananas (medium/large)
  • ½ cup unsalted butter at room temperature
  • 2 large eggs lightly beaten
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp vanilla essence
  • 1 cup pecans or walnuts toasted or toasted
  • 1/2 cup chopped Lindt
  • 3/4 cup sugar
  • Cinnamon to your liking

Topping

  • 1 banana sliced in three long ways dipped into brown sugar and cinnamon

 

Method

  1. Preheat oven to 175 degrees C and line a small baking loaf pan.
  2. In a bowl cream butter and sugar till creamy.
  3. Mash bananas with a fork until the consistency of chunky applesauce and add them to the batter along with 2 eggs and vanilla essence, mixing until blended.
  4. In a separate bowl, whisk together 1 1/2 cups of flour, cinnamon powder, 1 tsp of baking soda and 1/2 tsp of salt then add to batter.
  5. Fold in the nuts and chocolate. Pour into lined loaf tin and top with your sliced cinnamon sugar coated banana slices.
  6. Bake for 55 minutes until toothpick comes out clean. Let the banana loaf rest for 15 minutes before removing from tin to cool on a wire rack.
  7. Once cooled enjoy with soft butter and some peanut butter.

Healthier Options:

  • Make this into a honey banana bread, replacing sugar with honey.
  • Use organic whole wheat flour instead of all-purpose flour.
  • Reduce sugar to maybe 1/2 cup if your bananas are very ripe
