Asian Grilled Fresh Fish

Ingredients

  • 1 whole fish cleaned and washed.

The Marinate

  • 3 tbsp melted butter
  • 2 tbsp olive oil
  • 3 freshly crushed garlic cloves
  • Fresh thyme
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • Juice of half a lemon
  • Fresh parsley chopped
  • 1 tbsp hoisin sauce
  • Salt and pepper
  • 3 tbsp Chimichurri spice Blend ( You can get it from Woolworths)
  • 1 tbsp chinese sweet chilli sauce
  • 2 tsp crushed chilli

To stuff the fish

  • Sliced peppers and onions tossed in olive oil
  • Salt and pepper
  • 2 extra tbsp butter
  • Slices of lemon

Method

  1. Make slits on top of the fish. Slice fish sideways to stuff your onions and peppers. Place in a large foil and baking dish.
  2. Mix the marinate all together rubbing into the fish using your hands to make sure the fish is fully marinated.
  3. In the slit on top of fish add your lemon slices.
  4. Stuff the seasoned onions and peppers into the fish.
  5. Grill the fish until done. When half way cooked add the 2 extra tablespoons of butter to the top of fish and spoon the marinate juices from the foil onto the fish. I also added more of the Chimichurri spice just on top to get a little crisp.
  6. You can add to your foil potatoes and veggies to your liking.
