Apricot Soy Chilli Crayfish Tails
A quick and easy stove top or oven grilled cray fish tails that’s absolutely delicious with some crusty bread or a savoury rice. You could omit the wine and use fish stock instead.
Apricot Soy Chilli Crayfish Tails

Ingredients

  • 12 cray fish tales
  • 100 grams butter
  • 3 crushed green chillies
  • 3 tbsp sriracha sauce (according to your taste)
  • 2 to 3 tbsp apricot jam
  • 2 tbsp soy sauce
  • Salt and pepper
  • 4 crushed garlic
  • 2 to 3 tsp chilli flakes
  • Chopped coriander or parsley
  • 1/4 cup white wine or fish stock
  • 1 cup fresh cream
  • 2 to 3 tbsp olive oil

Method

  1. Melt the butter in sauce pan on low heat and while melting add your jam and rest of the ingredients except cray fish, fresh cream and wine. Once melted remove from heat and leave aside to cool
  2. Wash your cray fish, pat dry and pour the marinate over. Rubbing the marinate into the flesh.
  3. Add the olive oil to a pan on medium heat and with your marinated tails flesh down making sure all the marinate is added to the pot, allowing to fry for a few minutes.
  4. Pour your wine and fresh cream. adjusting your ingredient quantities such as apricot jam, chilli or sriracha sauce according to your taste.
  5. You could pop the crayfish into the oven to grill or have it just cooked on stove top.
  6. Garnish with chopped coriander and chilli flakes. Perfect to have with some crusty bread or savoury rice.
