Apple Cake
A simple old fashion delicious apple cake, perfect to have when warmed with a dollop of ice cream, fresh cream or maybe plain with some butter.
Ingredients
1/2 cup soft butter
1/2 cup sugar
2 tsp vanilla essence
2 large eggs
2 tbsp rum (Optional)
1 cup flour
1 tsp baking powder
A pinch of salt
2 Apples (peeled and chopped)
Sugar to sprinkling over cake
Slivered almond to sprinkle over cake
Method
Preheat oven to 180 degrees C.
Line a 20 cm cake tin or any small casserole.
Beat the butter, sugar and vanilla essence till creamy.
Add the eggs into the mixture while beating and the rum which is optional.
Add the flour, salt and baking powder, mixing it well and scraping of the mixture from side of bowl.
Add the chopped apples to the mixture and fold it in. You will wonder why so much apples but it bakes well.
Empty the mixture into a cake tin. Sprinkle almonds and sugar over. Bake for 35 minutes until skewer comes out clean when inserted.
If the cake browns to quick cover with foil.
Once baked remove from oven and set aside.
Sprinkle some brown sugar over with cinnamon while cooling.
