Aloo Or Potato Fry
Aloo or Potato Fry is simple stir fried potato recipe made using basic Indian spice mix. This quick recipe of chunky potato cubes stir fried with few basic spices brings out the best in them. I used the new Le Creuset TNS 26cm Shallow Frying Pan to make this mouthwatering dish which cooked it to perfection.
Aloo Or Potato Fry

Ingredients

  • 4 large potatoes peeled, washed and cubed
  • 3 dried red chillies
  • 1 sprig of curry leaf
  • 1/2 tsp of mustard seeds
  • 1/2 tsp of jeera seeds
  • 1/2 tsp turmeric powder
  • 2 tsp chilli powder according to your taste
  • 1 1/2 tsp jeera powder
  • Salt to taste
  • 1 1/2 tsp chickpea flour
  • 1 tsp Asafoetida/Hing
  • 2 tbsp olive oil
  • Chopped coriander and red chilli flakes to garnish

Method

  1. Heat oil in Le Creuset TNS 26cm Shallow Frying Pan.
  2. Once the oil has slightly heated, add the mustard seeds, jeera seeds and dried chillies and allow to splutter. Add asafetida and curry leaves and mix. Immediately add the cubed potatoes. Sauté on high heat for 3 minutes.
  3. Reduce heat on low to medium heat mix and leave to cook on low until potatoes start to cook through soft for about 15 minutes.
  4. Add the turmeric powder, chilli powder, coriander powder, chickpea flour, salt and mix. Stir fry without lid on high flame for 4 minutes and toss the potatoes well till they attain a golden crisp exterior.
  5. Remove from heat, garnish with fresh coriander and chilli flakes. Enjoy with soft roti or braised rice and dhall.
