A Quick Morning Breakfast
My quick morning breakfast is always a bowl of granola with double thick yogurt drizzled with honey. Last night I realized I ran out of granola and my oats so I decided to make my own cinnamons and honey granola which is paleo-friendly, grain-free, gluten-free, dairy-free, freezer-friendly, free of refined sugars and vegetarian.
A Quick Morning Breakfast

Ingredients

  • 1 cup almonds
  • 1 cup cashew
  • 1/2 cup pecans
  • 1/3 pumpkin seeds
  • 1/3 sunflower seeds
  • 1/4 cup coconut flakes
  • 1/4 cup coconut oil
  • 1/3 organic honey
  • 1 tsp vanilla essence
  • 2 tsp ground cinnamon
  • 3/4cup dried cranberries depends how much you want to add

Method

  1. Preheat oven to 135 degrees C.
  2. In a food processor or blender, add nuts and coconut flakes to chop into small pieces. Do not over blend.
  3. Heat coconut oil, honey, cinnamon over medium high heat in a large saucepan, for about 3-5 minutes. Remove from heat and stir in vanilla essence. Now add seeds, nuts and coconut flakes and stir to coat.
  4. Spread granola mixture evenly onto a baking sheet lined.
  5. Bake for 20-25 minutes or until lightly browned. Remove from oven and add dried cranberries, may need to press into granola mixture.
  6. Allow to cool for about 20 minutes or until hardened. Break apart granola. Store in an airtight container or jar for up to 2 weeks.
